Ganache and food safety???

Hi there all
Just a couple of questions regarding ganache.
* Can you leave ganache out after making covered ready to use the next morning?
* Once ganache has been refrigerated and then reheated does any left over ganache need to be discarded or is it safe to refrigerate again?
* I read earlier that it is best to leave ganache overnight but has anyone had success with a shorter time limit than this?

hi girls,
yes you can use the guanache for the next morning.
it should last for about a week at room temperature.
think about all those choc truffle you bought.
has been sitting there for days if not for months.
its basiccally the same as guanache. truffle has added butter and liquor.
bottom line is guanache is quite safe for a while at cool room temperature.
preferable used it. you can take out small amount out of time or what ever you need it. and leave the rest in the fridge.
yes place the guanache on the shallow container and put it in the fridge for a few hours or untill it form to a paste consistancy. then use it. so you dont have to leave it overnight.

That is what I would have done feeding just fam and friends just wanted to be extra cautious before dealing with the public!!!
